We have sourced and raised our own California-farmed white sturgeon for the past decade, creating the finest, spare-no-expense caviar on the planet. As wild populations of sturgeon species around the world have declined to alarmingly endangered levels, sustainably farm-raised fish have answered the call with a quality that rivals that of their wild-caught counterparts.
Our white sturgeon descend from wild Sacramento River stock through a breeding program advised by the University of California at Davis and the Department of Fish and Game. They are raised in ponds in the Sacramento Delta region of California from the time they are spawned through maturity at 8 years, when they measure about 6 feet in length and weigh in excess of 100 pounds. This process results in sustainably-raised fish with wild origins.
After processing caviar for nearly 30 years using the best resources available, we decided in recent years to invest in our own sturgeon farm in order to ensure consistent standards of quality and sustainability. This degree of control over the source of our fish has translated to an exceptional product. Immediately after we extract the roe from the fish, we separate the eggs from each other, clean, salt and store them at below-freezing temperatures for at least six months. During this time, the caviar develops its subtle, clean, nutty flavor.
