We have sourced and raised our own California-farmed white sturgeon for the past decade, creating the finest, spare-no-expense caviar on the planet. As wild populations of sturgeon species around the world have declined to alarmingly endangered levels, sustainably farm-raised fish have answered the call with a quality that rivals that of their wild-caught counterparts.

Our white sturgeon descend from wild Sacramento River stock through a breeding program advised by the University of California at Davis and the Department of Fish and Game. They are raised in ponds in the Sacramento Delta region of California from the time they are spawned through maturity at 8 years, when they measure about 6 feet in length and weigh in excess of 100 pounds. This process results in sustainably-raised fish with wild origins.

After processing caviar for nearly 30 years using the best resources available, we decided in recent years to invest in our own sturgeon farm in order to ensure consistent standards of quality and sustainability. This degree of control over the source of our fish has translated to an exceptional product. Immediately after we extract the roe from the fish, we separate the eggs from each other, clean, salt and store them at below-freezing temperatures for at least six months. During this time, the caviar develops its subtle, clean, nutty flavor.

Our research led us to choose glass as the optimal container for storing our caviar. Traditionally, caviar has been produced from the Caspian Sea and stored in metal tins, which frequently impart a metallic flavor to the caviar. Our unique, custom-made, deep violet glass jars are designed to extend the life of their precious contents, allowing only the desirable part of the light spectrum to penetrate the container.

We continue to explore opportunities for sustainability in this market. Currently we are working on a process whereby the roe is surgically removed from a pregnant female sturgeon, allowing us to rehabilitate the fish and release her back into her natural habitat.
